Few things can beat warm soups and flat bread during the winter. This class will feature Batura - fried soft bread, Chana - spiced chickpea soup, Rooti - chapatti flat bread, with a hearty Lentil soup rich in vegetables and onion, Naan - flatbread with onion stuffing with Cholar Dal - yellow split pea soup with raisins and coconut. Finish with chai - spiced tea. Vegetarians and non-vegetarians alike will enjoy this class.

More Simple Dinners After Work

Our first Simple Dinners class was a great success so we are back with more ideas. Hilary will use a variety of fresh and prepared foods to create three healthy dinners that take 30 minutes from grocery bag to table. Learn about and sample Vegetable Green Curry, Hearty Quesadillas, and "Burger Night" - a few healthy burger ideas served with Baked Fries. Come hungry.

Bean Cooking Basics

This may not be the most seductive class title but don't pass by an opportunity to learn just how easy, affordable, nutritious and scrumptious the humble bean can be. Beans and legumes are just goodness waiting to happen and that's just what we'll do in class. We'll discuss cooking methods, digestion (yes, we will address this issue) and then get to cooking. We'll prepare Black Beans with Yellow Rice; Braised Kale with Cannelini Beans served over Homemade Polenta; Roasted Squash with Corn & Pintos; and Lentil Spinach Soup.

Fabulous Ways with Winter Vegetables

If you want to get really excited about eating hearty winter vegetables like cauliflower, brussels sprouts and root vegetables then this is the class that will inspire you. Paige will take humble veggies to a new culinary level when she prepares Indian Spiced Cauliflower & Yukon Potatoes; Ragout of Roasted Winter Squash & Root Vegetables with White Beans; Butternut Squash Pizza; and Orecchiette with brussels Sprouts & Bacon. February just took a turn for the better.

Easy Salmon Everyday

Dinner doesn't always have to be a big production. Try something simple, with Salmon - the richest source of Omega-3 oil. All dishes in this class are quick and easy to prepare, perfect for a busy life, and are so flavorful that healthy eating becomes a pure pleasure. We'll start with Grilled Salmon on Green Salad (with Sesame Seed Vinaigrette), followed by Seared Salmon with Warm French Green Lentils, Oven Roasted Wild Salmon with Tomato Chutney (served on Wilted Spinach), and Broiled Salmon Fillets with Sauteed Onions, Zucchini, and Sun-dried Tomato (served on Lemon Linguini). This health-conscious menu is sure to please anyone. Each entree is low in fat and packed with nutrients and makes a delicious everyday family meal.

Chicken Cooking Basics

Here is a class we've had lots of requests to repeat - a class for people who like to eat chicken but are in a preparation rut. Chef Paige will walk us through the basics of chicken cooking including how to butcher a whole chicken and appropriate cooking methods for various parts. Paige will prepare recipes that showcase roasting, baking, braising and pan-frying. She'll also demonstrate how to make delicious and versatile chicken stock. Great recipes, excellent tasting as usual. Don't wait to sign up - we expect this class to fill in a blink!
