You don't need a big budget to eat well. This class will focus on simple foods that are affordable and healthy. Using lots of ingredients from the Merc's fabulous Bulk Department and fresh, seasonal produce we'll create an economical feast. In addition to cooking demonstrations and yummy sampling, we'll do a cost analysis of the dishes we prepare which will include Festive Cous Cous Salad; Tasty Tabouli; Lumpy Burritos; and Frittata with Sweet Peppers and Summer Squash. And for dessert, warm Blueberry Wrinkle served with Vanilla Yogurt.

Simple, satisfying and seasonal pasta dishes make the most of produce fresh from the Farmers Market. Join Paige for a delicious evening of ideas and inspiration. Enjoy Fettuccine with Corn, Pancetta, & Sage; Linguine with Pesto, Green Beans & New Potatoes; Tricolor Pepper Pasta; Penne with Baby Zucchini & Basil; and Fusilli with Eggplant, Tomato & Peppers. To get you jump-started making these delicious pasta dishes, each class participant will get to choose a complimentary box or bag of pasta from our Grocery Department!

Greek food is perfect for summer as it makes full use of vibrant fresh vegetables, seasonal fruits and seafood. Chef Nancy will start class with a light Greek appetizer; then on to Classic Greek Salad; and Grilled Salmon Wrapped in Grape Leaves served with Yogurt Sauce. She'll finish off our trip to Greece with Roasted Fresh Figs with Thyme-Honey Syrup. Don't wait to sign up, seating on this plane is limited.

When the weather heats up it's hard to think about spending time in our kitchens. But with a little planning, fresh seasonal produce, and (most
importantly) Paige's ideas, we'll be enjoying fabulous cold foods that will help us beat the heat. Join Paige for demonstrations and sampling of Chilled Sweet Corn Soup; Cool Summer Vegetable Platter; and Frozen Peach Mousse with Raspberry Sauce. Paige will also prepare two simple and cool chicken and salmon dishes to round out your summer meals. With Paige's help we can survive summer in Kansas.

for Summertime Feasting

Forget about those cheesy, red-sauced enchiladas that leave you feeling heavy and too full. Instead, join Chef Nancy for light and fresh Mexican cuisine. The evening will start with fresh Seviche (a traditional Mexican dish made with fresh fish marinated in citrus juice and spices, served as an appetizer or light meal in itself); Chipotle Shrimp with Fresh Corn Cakes; Yucatecan Grilled Fish Tacos; and for a very special dessert Pastelde Tres Leches (a fabulous dessert made with "tres leche" or "three kinds of milk").
