Herbs for Jitters

In this day and age it seems that everyone is under stress; everyone is multitasking; everyone is burning their candles at both ends. This puts our adrenal glands on overdrive, floods our bodies with cortisol, and causes a whole list of health problems beginning with poor sleep. We need to know how to calm down our nervous systems. Herbs offer many ways to helps us with this issue. Ocoee can teach you which herbs will calm down your racing heebie-jeebies. You can use herbs to get throuogh the Christmas crunch without an internal burndown.

Two Scones & a Fruit Sauce

Learn how to make two very different scones - Oat Scones made in a skillet and Lemon Ginger Scones baked in the oven. These delicious wholesome baked goodies are even nicer when served with a warm Swedish Dried Fruit Sauce that we'll also learn how to make. In this limited hands-on class you will have the opportunity to work with these doughs to get a feel for making them at home. At the end of class participants will sit down together to share a meal of homemade soup accompanied by the scones and sauce we'll make in class.

We'll put on a pot of tea for a sweet evening of holiday baking. Join Paige as she shows you how to handle and form dough to create fabulous holiday treats*. Paige will demonstrate and you'll enjoy: Almond Crescents, Chocolate-Caramel Bars (nicknamed "danger bars" by Paige's friends), Dried fruit "Newtons," Swedish Ribbon Cookies, Chocolate Truffle Cookies, Classic Scottish Shortbread Fans, Linzer Thumbprint Cookies and Cranberry-Pistachio Biscotti. We're going over the top - please join us! *Note: This class is not about how to make dough but rather how to handle it.

A More Gentle and Whole Foods Approach to the Holidays

Winter holidays are a wonderful time to share special food with friends and family. This class will help you make tasty holiday foods that balance tradition and nourishment. Hilary will create wonderful holiday treats using whole grains and alternative sweeteners like sorghum syrup, agave nectar, maple syrup, sucanat, and molasses. We'll prepare and taste homemade Whole Wheat Cinnamon Rolls, festive Maple Ginger Cupcakes, Simple Pudding Cake and a warm Oat Fruit Crisp. All served with a favorite winter beverage, Yogi Tea. Come and be nourished.

A Mexican Christmas Fiesta

Spice up your holidays with some of the classic wintertime fiesta foods of Mexico, brought to your home kitchen by Chef Nancy. Start new Christmas traditions with a selection of festive south of the border foods including: Queso Fundido (hot, gooey cheese dip served with fresh chips); Classic Pork Tamales; and Turkey in Red Mole Sauce served with with freshly made corn tortillas. End the evening with Chocolate y Churros (rich, thick hot chocolate with cinnamon fritters). Feliz Navidad!

A Dickens Christmas - Old Fashioned English Desserts

We'll put on the tea and create an opportunity for you to relax for two hours in the middle of the holiday rush. Step back in time with Mari Ruck as she cooks up English holiday classics. Enjoy delicious Sticky Toffee Pudding; a gorgeous Trifle (cake layered with fruit, custard and whipped cream), and melt-in-your-mouth Shortbread. Join us for a special feast - served up with Mari's perfect combination of fun, wit and information.
