Mexican Seafood Fiesta for Cinco de Mayo

You might not think of seafood when you think Mexican. Perhaps we can change your mind with great seafood recipes for Cinco de Mayo. We'll start with Coctel de Camaron (Mexican Shrimp Cocktail) served with Avocado and Fresh Chips. Then enjoy Grilled Salmon Veracruzano (Veracruz-style fish with a tomato-chile-green olive salsa) served with warm Corn Tortillas and Black Beans. And the perfect punctuation to our Cinco de Mayo celebration-Key Lime Tart. Fantastico!

It's the month of celebrations - from Mothers Day to Graduations. And what could be more perfect for these special occasions than beautiful and delicious homemade cupcakes. Bonnie will be making a fantastic line up of cupcakes with just the right complementary frosting. She'll also teach some simple garnishing techniques. Learn how to make Chocolate Cupcakes with Chocolate Espresso Ganache Icing; Lemon Cupcakes with Citrus Cream Cheese Icing; Vanilla Cupcakes with Classic Butter & Cream Icing; and Peanut Butter Cupcakes with Peanut Butter Icing. We'll put on the tea and coffee.

A Spring Meal from the Farmers' Market

This time of year we're all ready for fresh, local vegetables from the Farmers' Market. If you're looking for new ideas and inspiration to eat locally, Chef Paige's instruction and fabulous samples are just the ticket! Chef Paige will demonstrate and you'll enjoy fabulous Swiss Chard Tart with Goat Cheese, Currants & Pine Nuts; Market Ragout of Fresh Spring Vegetables; Orrechiette with Asparagus, Peas & Pancetta; and a Simple Salad of Roasted Beets. You'll end class with the perfect Spring dessert - Rhubarb Streusel Coffeecake. We'll do a drawing at the end of class for a $25 gift card for the Lawrence Farmers Market!

Warm, luscious cinnamon rolls fresh from the oven - what a treat for a Mother's Day morning! In this class learn the basics of making fabulous cinnamon rolls. Demonstration and tasting... mmmmmm. Indian Vegetarian Thali

India is home to one of the world's greatest vegetarian traditions. We will learn an assortment of vegetable curries and side dishes, all presented on a banana leaf "plate". Enjoy Potato and Pea Samosas with Mint Chutney to start. Then on the Thali we'll enjoy Sri Lankan Carrot Curry; Curried Chickpeas with Tomato; Cabbage with Mustard Seed and Coconut; Yogurt with Spinach, and Buttery Basmati Rice. We'll finish our meal with a sweet surprise! Take your vegetarian repertoire to a spicy new place.

Arthritis, the Herbal Answer

We don't have to hurt. Arthritis is a very old condition, going back thousands of years. So humankind has had ample opportunity to learn which plants can be helpful. In this class Ocoee will teach from personal experience which plants to use for prevention, joint repair, as well as management of pain and inflammation. Come learn how to stop suffering.

We're off again on travels with Chef Paige - this time to France. Paige will use the freshest seasonal produce to cook up a menu including a classic French Chicken Saute; Asparagus & Gruyere Tart; Salad of Warm New Potatoes with Camembert & Bacon; Seared Salmon with Asparagus, Peas & Fresh Herbs. Kids Make Designer Enchiladas in The Merc Kitchen

Kids! This is your chance to learn how design your own enchilada with the fillings you love. Connie will show how to make a variety of fillings and toppings. Come to class hungry so you can taste samples of chicken, veggie, bean/veggie and cheese enchiladas adorned with your choice of topping.
