Looking for ideas for gluten free meals and snacks? Join Hilary as we enjoy a days worth of gluten free eating. Hilary will show you how to start your day with yummy pancakes made with sorghum flour. Then for healthy snacking she'll make homemade crackers with amaranth flour. Finally, two simple and delicious meal ideas - a beautiful and savory vegetable cobbler, and easy to make turkey roll ups. Additionally, we'll sample a few gluten free prepared foods that you can find on The Merc shelves to make gluten free eating quick and easy.

What better way to celebrate fall then with a cup of tea and five seasonal, European-inspired desserts. We hardly need to say more, except to mention that Chef Paige is teaching. On her menu for this delectable class Paige will be baking and you'll be sampling: Brandied Apple & Currant Crumb Tart; Gateau Engadine (a classic Swiss double crust "tart" filled with caramel and walnuts - Paige's version also has chocolate); Marbled Chocolate-Sweet Potato Cake; Fall Fruit Compote of Wine Poached Pears & Dried Fruits; and White Chocolate & Cranberry Bread Pudding. Make Medicine at Home

This demonstration class will cover the ins and outs of making an herbal tincture as well as making an oil infusion and salve making. Making medicine is fun and economical and of tremendous value to you and your family. It is such a huge convenience to have your own pharmacopia right in your own home. You make the items specific to your family; you know exactly what's in there; and the cost savings is impressive. When it seems like our health system is coming apart at the seams, you need to know how to make medicine.

You Can Make (an Imperfect) Pie!

Each class participant will make a pie to take home.
Class is limited to 8.
Pie - everyone loves it, but are you afraid to make one yourself because it won't be perfect? Put your apron on and come get flour on your hands as we each make a very tasty imperfect apple pie (made with local apples) that you'll take home to bake. For many years Hilary has been making scrumptious pies (that don't always look like the ones you see in a magazine) and you can too. So bring your own 9-inch pie plate and rolling pin and together we'll make an imperfect pie that your friends and family will love. Really, you can make pie and just in time for Thanksgiving. Plus, we'll eat the pie Hilary has made earlier in the day.

Paige will transform sweet potatoes into Sweet Potato Biscuits and a melt-in-your mouth Sweet Potato, Apple, and Dried Fruit Gratin. Learn how to use hardy winter squash in a fabulous White Bean, Winter Squash and Tuscan Kale Soup; and a satisfying Warm Winter Squash Salad with Bacon, Manchego & Pecans. And for dessert - how about Pumpkin Cake with Brown Butter Streusel to warm up a chilly evening? Join us for this delicious seasonal cooking class with ever-popular Chef Paige!

Join us for a mostly new version of last year's delicious (and totally packed!) class. Learn to make beautiful, delicious desserts that you can make ahead and will leave your guests asking for more! We'll start class with a simple supper of homemade soup and bread that will anchor you for what's ahead. Then on to dessert - Chocolate Tart with Candied Orange Peel - simple and elegant; Chocolate Tiramisu - creamy and easy; and Chocolate Raspberry Buche de Noel - the showstopper! (And yes, we did this one last year but it is the ultimate Christmas dessert and worth repeating). Happy Holidays!

Tofu Basics - with a Holiday Twist

Whether you're brand new to tofu or looking to expand your current tofu repertoire with some special holiday tofu recipes - we promise a fun and delicious evening! We'll start with an appetizer of Chipotle Tofu Wedges served with Avocado and Lime Wedges. The centerpiece of our meal will be a spectacular Tofu Turkey served with Golden Mashed Potatoes and Miso Gravy. We'll end our evening with a slice of Tofu Sweet Potato Pie with Whipped Topping. Each class participant will leave with a pound of Central Soyfoods Tofu to get you started with your holiday feasting.
